I feel a little stupid for not posting in this section before-- I just saw recipe threads on other boards and posted there. Anyway.

This is my latest favorite thing to concoct and it's stupidly easy.

Measure out 100cals of fruit (I usually use a small apple and some frozen berries) and chop it up into thin pieces (as opposed to chunks/squares, which won't work as well) in a bowl.
Add a few tsp sweetener, a dash of salt (it makes a difference, trust me) and some 0cal (or other things like this, just be sure to count) butter spray, & mix it up well.

Then in a small bowl or cup, mix 1 tsp cornstarch (about 10-12cals) with 1 tsp cinnamon, and vanilla & almond extracts. You can either use 1/4cup of water or you can use juice/almond milk/skim/etc. to mix with this. Stir it up and pour over fruit bowl. Microwave for 1-3 minutes and stir it up again.

Simple, right? But it totally tastes like... pie without crust. I guess that's basically what it is. Anyway, it's good and relatively healthy.

I have a recipe for brownies that I got from somewhere on the internet (I really wish I could remember where :().
Vegan Pumpkin Brownies

1 cup unsweetened packed pumpkin
1/2 cup Splenda Granular (you can use sugar if you really want)
2 teaspoons vanilla extract
3/4 cup flour (can substitute whole wheat flour)
1/3 cup cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tsp cinnamon
1/2 tsp cloves (optional)
Boiling water (or coffee)

Preheat oven to 350 F.
Spray an 8 x 8 baking pan.
Mix pumpkin, Splenda, and vanilla extract together.
In another bowl, mix together the remaining dry ingredients.
Pour the ingredients into the dry, and stir until just combined. You can add water/coffee if neccessary. It will be fairly thick.
Spread the mixture in the pan, and bake about 28-30 minutes or until the center is firm to the touch.
Cool before eating.
The entire recipe is about 520 calories.
I wonder if it would be possible to add some other fruit or vegetable puree or something to increase the number of servings and lower the number of calories per serving.

Weetabix Cake
(Serves 12)

Ingredients:



Weetabix (37.5g/2 Weetabix)
Sultanas (113g/4oz) (Optional but fairly bland without.) (Alternatively you can use raisins, dried fruit or other)
Skimmed Milk (142ml/5floz) (Alternatively you can use soy, almond, rice or other milks.)
Water (142ml/5floz)
Self-Raising Four (113g/4oz)
Mixed Spice (15g/1 Teaspoon) (Alternatively you can use flavour extracts or other sweet spices)
Splenda (14g/0.5oz) (Alternatively you can use other artificial sweetners)
Egg Beaten (1 Egg)

Method:



Preheat the oven to 180°C, 350°F or Gas Mark 4.

Put the Weetabix and sultanas in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.

Stir in the flour, mixed spice, Splenda and beaten egg.

Spoon the mixture into a 454g (1lb) lined loaf tin and bake in the preheated oven for 1:15 hours until cooked.

Cool on a wire rack before serving, then cut into 12 slices.


This is a surprisingly delicious low calorie recipe that I have served to non-ED sufferers on multiple occasions and every single time they have loved it.



Sugar-Free Victoria Sponge
(Serves 12)


Ingredients:



Light Margarine (150g/5oz)
Honey (3 Tablespoons)
Self-Raising Four (150g/5oz)
Beaten Egg (3 Eggs)
Sugar Free Or Walden Farms Jam (Enough To Spread)
Filling (Enough To Spread)

Method:



Preheat the oven to 180°C, 350°F or Gas Mark 4.

Melt your margarine and honey in a small pan over a low heat.

Sieve your flour into a large bowl.

Stir in the hot liquid.

Stir in beaten egg.

When thoroughly mixed, spoon the mixture into an 18cm (eight ins) cake tin.

Bake in the centre of the oven for approximately 20 minutes until risen and an inserted skewer comes out clean.

Remove from the heat and leave to cool for 10 minutes.

Turn out from the tin and place on a rack to cool further.

Slice in half and spread with sugar-free or Walden farms jam before replacing the top.

Serve alone or with light whipped cream & a strawberry.



This light sponge is always a winner & also makes a perfect lower* calorie birthday cake. Team it up with sugar-free or Walden farms jam and light whipped cream or make another delicious filling.

i make low cal sugar cookies with splenda. it makes about 2 dozen cookies at around 120 cals A BATCH! very good.

I love this when I'm craving something sweet - I only eat it a few times a month, though - scared of the cals in bananas but they do make ya poop!

I mash a large banana in a bowl and mix it with lots of cinnamon and a packet of artificial sweetener. It keeps me from craving sweets, is bulky and fills me up!

Well.. Bananas have soluble fiber, so they can help cure constipation.

But, it depends on the ripeness. The green ones can make you constipated.

Bananas are also a cure for diarrhea. Lol. Because of the potassium.

Ok, so I'm still tweaking this one a bit, but it's so good!!!

no-bake cookie/brownie bars:

in a bowl, mix
1/2cup oatbran (150cal)
1 tbsp low-fat cocoa powder (20cal)
2 tbsp instant pancake mix (50cal)
1/3 cup splenda (or other sweetener, tweak to your own taste)

when the dry stuff there is all mixed up, add in 2 tbsp low-calorie margarine (25 for Becel RSF) and a couple tablespoons of water to soften it up.
(should be thick/gooey consistency) feel free to add in some vanilla extract or something...

then fold in 1 cup puffed wheat cereal (50cal) and mix it in as well as you can.

now get a flat container and dump the mixture in it, flatten it out and cut lines to separate portions. I did 8 @ 35cal each. (Which is pretty good, since they're a decent average cookie/brownie size and they taste really good, too. Like cookie dough.)

now stick it in the freezer and wait til they're solid. Enjoy :D
