Any 100 Calorie Recipe Ideas For Stuffed Bell Pepper Halves?

I need some super-safe safe recipe ideas as I love bell peppers but just do not know what to place in them & they seem like a great low calorie meal choice. x

Cut a red one in half (you'll only need to eat a half, they are very filling) and fill it with chopped up skinless tomatoes. Chop up a clove of garlic and add that too. Use a spray can of olive oil (so you don't add too much) and then put it in the oven.

this recipe looks pretty good. it's not the first picture you see (the cheesy red peppers) it's the one below, after you scroll down a bit. anyways, one pepper is just under 200 cals which is pretty good and it lists the amount of calories in each ingredient though, so it would be easy to adjust what you put in it and still calculate the calories :] hope that helps! xx

This recipe is really tasty and you can have both halves for only 188 calories.

Ingredient
1 large red bell pepper
1 plum tomato (preferably Roma), deseeded and chopped
1/2 cup frozen ground-beef-style soy crumbles, thawed
1/2 cup chopped mushrooms
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup canned tomato sauce
2 tablespoons shredded fat-free cheddar cheese
1/2 teaspoon dry taco seasoning mix
1/4 teaspoon minced garlic

Directions
Preheat oven to 375 degrees.

Bring a medium pan to medium-high heat on the stove. Add mushrooms, onion, and green bell pepper. Cook for 3 to five minutes, stirring occasionally, until veggies are slightly softened. Add garlic to the pan and cook for 1 additional minute. Transfer mixture to a medium bowl.

To the bowl, add tomato, soy crumbles, tomato sauce, cheese, and taco seasoning mix. Mix thoroughly and set aside.

Slice off the top of the red pepper, and then slice it in half lengthwise. Remove seeds.

Spray a medium baking dish lightly with nonstick spray. Place pepper halves in the dish, cut side up, and bake in the oven for 25 minutes.

Remove pepper halves from the oven and reduce temperature to 350 degrees.

Once pepper halves are cool enough to handle, use paper towels to soak up any excess moisture. Evenly spoon veggie mixture into pepper halves. Return to the oven and bake for 20 minutes. Let cool slightly and then dig in!

I was hoping to use both halves 150g at 45kcal whilst also adding a stuffing that is no more than 55kcal so it does not exceed 100 calories?

Adding mushrooms & onions sounds like a good start but maybe I need to work out my own recipe somehow, I suppose I could also add some carrots but I really don't want to add any kind of tomato sauce or cheese.

There has got to be some super low calorie recipe ideas out there for these, one day I am going to write an under 100 calorie meals cookbook! x

Well with mine it would be the cals for the capsicum and between 20-25 cals for one whole medium tomato. But yeah it's best to experiment to see what you come up with.

25 cals for half a caps
25 cals for one tomato
5 cals for one clove of garlic
1-2 cals for a sprinkle of dried basil
40 cals for one teaspoon of olive oil (but will be less with a spray)

Thats just under 100, I should have put all the cal descriptions in my other post.

Or you could put a vegetable salad in it like its a little bowl?

Is the olive oil required?, I think I will try with my 1 calorie olive oil fry light spray.

I just said that as a general value, cause I'm in Aus so we all have different brands. Try it out for the taste, should be fine though, just replace with whatever works.

Ok, so this thread gave me ideas... and I started experimenting... with amazing success!

you need:
3 small bell peppers (I like red ones) (about 20 each, depending on size)
3-4 cloves of garlic (about 15 cal, depending on size)
half a small/medium onion (20-30cal)
veggie ground round (or whatever your preferred substitute, but this is 60cal for 1/3 cup)
2 tbsp FF cottage cheese (20cal)

Preheat your oven to 350. Chop up the onion and garlic into tiny bits and toss them in a a pan on medium heat with some 0cal spray and your preferred spices. While that's happening, cut each pepper in half & take off the stem and insides. In a bowl, mix veggie ground round and cottage cheese (again, whatever spices, or you could add a little tomato sauce as long as you remember to count the cals) with the sauteed onion/garlic. Stir it all together and scoop into pepper halves.
Line your baking sheet or dish or whatever with parchment paper (so you don't need oil or anything) and stick them in the oven for 45min - 1hr.

They end up at 30-40cal each half. (mine turned out 30 each)
