View Full Version : awesome Spaghetti Squash Alfredo! Only 75c per cup!

Ok! Just made an amazing recipe! Had a GIANT bowl of Spaghetti Squash Alfredo! And only 150 calories for 2 cups!!! ‎1 cup = 75 cals! 1/2 cup = 37.5 cals! It is super super filling too! I would feel comfortable serving this to anyone and eating a large portion without raising suspect from my family.

recipe:

Ingredients

2 tsp garlic salt
2 wedges laughing cow
175 g onion
30 g capers
155 g green beans
800 g spaghetti squash
2 cups water

Directions

Halve squash, remove seeds, place both halves on baking sheet with 1/2 cup water.
bake with cut side down on 45-60 minutes at 350*f.
Set aside to cool while preparing veggies
Dice and steam sauté veggies in the garlic salt and 1 cup of water.
Scoop out squash strands, mix with veggies. Reduce heat to low.
Once veggies are warmed drain any excess water.
Mix cheese wedges and 1/2 cup water in separate small microwaveable container.
Microwave in 15 second increments, Stirring until blended
Mix sauce with squash and veggies.
ENJOY!

laughing cow makes this light speadable swiss cheese, 35 cal/wedge I think. It's great stuff for us calorie-conscious people!

I tried this tonight, with just the cheese and spaghetti squash. I made the squash then stuck it in a pan, then I made the cheese sauce and poured it into the squash and stirred it up. I added an extra half wedge of the cheese to thicken the sauce.

Oh. My. Gosh. It tastes like cheesy delicious fattening goodness but it's not! It SOOO good! I had been wanting macaroni and cheese for so long but I 've been afraid because of the calories. I could totally take a pot of this to a potluck and people would be all over it.

I am so glad you like it! If you let the sauce mix with everything the sit for a few minutes it will thicken some. I served it at a dinner party a couple nights ago and people liked it! It's a mind trip for me cause it tastes really rich but it's actually pretty safe! Lol
