Hello-
I'm a celiac and am looking for some nutritions carbs to add to my diet. A lot of gluten free products are really really calorie dense and I'm looking for some lighter stuff, or suggestions on how to make some of the bread mixes a little bit lighter.
I have a Bob's Red Mill gluten free bread mix that I'm going to experiment with, but if anyone has ideas and suggestions for lower calorie gluten free breads and such, please let me know. Gluten free stuff is expensive so I don't want to waste a $6 bread mix :)
Also suggestions for brands to check out would be nice. I've been living gluten-free for over a year, but there's just a lot to adjust to and it takes time.

I know there're different degrees of ciliac can you have whole wheat stuff or oats ?
Or none of them?

I didn't see the cal count but you could figure it out, read reviews some ppl substituted eggs for egg substitute ( I dnt know if that's gf) and sugar for splenda
I have also seen gf flat bread under rotti but it's high cal and carb

Hmmm, I'll have to check. I'm sensitive enough to react to Oats... so I have to stick with slightly gluten free stuff. No whole wheat for me either. I tried a bread today that was pretty low-cal on the ingredients- used egg whites and didn't add oil or butter. It turned out great so I'll be doing that from now on! :)

Congrats I have a friend that's very sensitve to wheat gluten and I heard it's hard to find good tasting bread! That flax seed one is completely GF tho and the reviews say it's good!?

Yeah, the flax bread I've had have been from a health food store in my neck of the woods, but it definately has flax in it, and I think that makes it yummier and more moist.
I just made a gluten free soda bread, but something went terribly wrong because it's all gummy still after being in the oven for like an hour! Dangit!

Maybe it's the flour mix, I was reading and saw that the rob mills or w.e wasn't the best there are all purpose gf flour recipes on the net you could get the ingredients for just one recipe to see if that works!
How did you find you you had celiac

i'm gf as well. what recipe did you use for the bread that turned out really well? i would be super interested to try to make it!

It was Bob's Red mill... i used yogurt for the oil, egg whites for the eggs and then also low cal almond milk for the milk part. turned out great.
Found out about celiac through a dietary challenge since my blood results were inconclusive and I didn't have the money for an endoscopy.... :S

what about using ground popcorn for some of the flour? i have a friend that has done this and it works out nicely.
