Hello all...
I love pumpkin pie... anyone have a good low-cal recipe to share? I usually make mine crustless and vegan w/silken tofu, spices and sweetener, but I'd love to hear if anyone has any other ideas :)

I've never made it before, but your's sounds awesome! Would you mind posting your recipe? I'd love to make one for Thanksgiving :)

Yes!

1 15oz can pumpkin
1 box firm silken tofu
Sweetener to taste
Spices to taste

Some kind of crust, or no crust!

Blend the ingredients and pour into a small baking dish. Bake at 350 for about 30 min. If you want to feed many, just double the recipe and bake a little longer, should turn out OK. Nutritious, vegan, NO FRIGGIN CREAM or EGGS! YAAAY!

how much sweeter? And how much/ what spices? And how big is the box of silken tofu? How about the pumpkin? (sorry for being an idiot!)

Yu know what? pumpkin pie in the best possible pie yu can eat. even with the crust. It's the lowest in calories & has more nutitional value than a lot of other pies too :)

I'm sure glad, cause it's one of my favourite foods! ^.^

LOL you're not an idiot! Tofu is 12 oz, pumpkin is 15oz, I use cinnamon, nutmeg and some cloves and just taste the filling until I like the spice. Sweetener can be sugar, stevia (which I use), Splenda, or whatever. Just taste the filling until you get it as sweet as you want it. Since the filling is just pumpkin and tofu, you won't get food poisoning from eating it uncooked. In fact, I've made a pumpkin smoothie that was basically just like this except not cooked. It was so good.

I could totally just eat a can of pumpkin puree. I love it. I've been tempted to do that before!
