I have quite a few little recipes or just meals I frequently eat that I think some of you girls would like. A few are a bit...inspired (weird, spur of the moment :p), and some are amazingly simple and probably couldn't be called recipes.
Feel free to add your recipes and frequently eaten meals, :D.

Vegan Sugar-Free 'Jello'
Ingredients:
-10 tablespoons Agar Agar flakes (30)
-2 cups/58 packets Truvia (46.4)
-7 cups water (0)
-Food coloring (0)
Makes: 7 one cup servings, 10.9 per serving.
Directions:
Add agar agar and water in large pot, let set for 30 minutes.
Bring to boil and add Truvia, stirring until completely dissolved and even. Add food coloring and stir evenly. Fill hot mixture into 7 one cup molds, set on counter until cooled, then refrigerate.
note: The Agar Agar flakes and Truvia say 0 on the label due to the fact they can be legally claimed as so since they are under 5 calories per serving. I found the actual caloric content and used it for this recipe.

Definitely going to try all of these. They sound awesome!

A new favorite of mine is mashed cauliflower. I don't completely mash it- I leave it a bit chunky and it's absolutely amazing. Great filler too!

8oz (1c) fresh cauliflower [62]
Cayenne Pepper [0]
Garlic Powder [0]
Bouillon (veggie, beef, chicken) [10]

- Boil the cauliflower until it's VERY soft (about 10-15 minutes)
- Drain the water and place cauliflower in a bowl and mash thoroughly (potato mashers work great)
- Mix in seasonings and voila!

It's awesome. About 75 calories total, delicious, and very filling. If you want a creamier consistency you can add about 1/4 cup fat free milk / soy milk before you blend (haven't tried it this way though- experiment at your own risk!)

Another favorite of mine are zucchini noodles. I found the recipe on this site fatsecret.com (it's got all kinds of awesome stuff, you should check it out), and it is to die for. It also isn't very difficult to change portion sizes and you can season as you please. They taste amazing with pasta sauce. Hope you enjoy ^^

Servings: 4
Calories per Serving: 80

1 tbsp black pepper
2 tbsp olive oil
2 medium zucchini

- With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
- Continue making ribbons as you turn the zucchini to get all the green part off first.
- When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
- Heat a large skillet on medium high.
- Add the olive oil and zucchini "noodles."
- Saute the "noodles" for 2 to 3 minutes.
- Season with freshly grated black pepper and salt if desired to taste.
- Serve with your favorite pasta sauce!

Low Calorie Ranch Dressing

1 (1 oz.) pkg. dry ranch style salad dressing mix
1 c. buttermilk
1 c. plain low fat yogurt

Mix ingredients until smooth to creamy. Refrigerate several hours before serving. 10 calories per tablespoon. I personally can't stand eating salad plain, so I just don't eat it at all because it's impossible to find any dressing that doesn't make me feel insanely guilty. Problem solved :3
